Did the winter time cooties catch up to your family too?

It is rampant Flu and Cold season, and so many other illnesses - Try this SOUP to feel better!

If you are a regular run of the mill family like us, then likelihood is that your family either in part or all, have gotten a case of the winter sickness. Whether it be flu, cold, or whatever else is roaming out there, it has likely made it's way into your homes like it did ours this long weekend. 


What does sick kids, husband and more call for? A delicious hearty easy to digest soup. 


So my friends I give to you the "Italian Penicillin" that has changed my life! Hopefully it will help yours too!


While the recipe is broadly shared on different mediums, I came across it from my favorite place, Tiktok, so I share with you "Caterina's Easy Homemade Italian Penicillin" recipe. 


  • 4 cups - organic chicken broth or veggie broth (whichever you prefer) also organic is up to you
  • 6 cups - water
  • 3 celery stalks (cut them in half)
  • 3 carrot stalks (Peeled and cut in half)
  • 6 garlic cloves (whole)
  • 1 whole onion (yellow or white will work)
  • 1 tablespoon chicken bouillon 
  • 1 teaspoon salt
  • Pastina or Orzo
  • Sprinkle of Parmesan cheese (to top your bowl of soup)

Directions:

  1. In a stock pot combine the water, broth and all the veggies - bring to a boil, then continue to simmer on medium heat for 45 minutes.
  2. In a separate pot when there is about 15min left of your boil - cook the pastina (or pasta of your choice)
  3. After 45 minutes - with a slotted spoon collect all the veggies and place into a blender, add chicken bouillon, and add 1-2 ladles of broth to help blend. 
  4. Once fully blended, return to the pot of broth.
  5. Now serve your preferred pasta, and pour broth over it - top with parmesan and enjoy!

If you want to really beat the sickness yuckies - make a good pot of this, and freeze it in cup measurements. It is an easy handy trick to get you and yours feeling better in no time!


Personal note: I had some frozen cup cubes in my Freezer - and made 2 cups in no time flat with this freezing tip!
